Maui Hawaii-2013

Last week Corey and I spent in Maui. It was beautiful. The views definitely did not disappoint. We stayed at the Sheraton Maui, which had the best beach and was right by Black Rock where we did a little snorkeling. There weren’t a lot of fish, but we did see a few cute fish and 2 HUGE sea turtles. Very Cool! We spent a few of our days on the beach, Corey enjoyed trying the local beer and I stuck with the island cocktails. The picture above is of a Drunken Monkey, also know as a Dirty Banana in Jamaica.

We also went to a traditional Hawaiian Luau. The hula dancers were great, but the food…not so much. It was still neat to experience it and the open bar helped! They had several signature cocktails, I enjoyed the Lava Flow….yum!

One night we went on a sunset dinner cruise. It was really cool to see the sunset on one side and then turn your head and see the moon coming up on the other. The musical entertainment was also pretty fun. A big bald guy with an old school white piano guitar thingy singing along to some music. HA!

We met up with Corey’s Uncle one afternoon to play a little golf. We played Kapalua-The Plantation Course. The greens were super tough to figure out, but the course was beautiful and played pretty easy for me. I even birdied number 18…the “famous” hole. Yay ME!
On our way to the course we stopped and had lunch at the Maui Brewing Company. Corey really enjoyed it for the beer part…I thought it was pretty neat too. I had their traditional pub plate. (Pork, Rice, & Macaroni Salad) Interesting…but good.
Dinner that evening was at Merriman’s Maui. It was fabulous. Everything was great! I started off with fried goat cheese and a fresh strawberry salad. Monchong for an entre’ and white chocolate marsaladas (like a beignet) with a kona coffee and caramel dipping sauce. It was one of Top 5 restaurants in Maui- I definitely think so!

In order to “really” see Hawaii, we decided to take a helicopter tour over Molakai to see the sea cliffs and huge waterfalls. It was breathtaking! WARNING-if you get even the least be air sick…take a lot…I mean A LOT of motion sickness medicine. It is rough. I closed my eyes about half way through the flight.

After that we grabbed a bite to eat at Hali’imaile General Store and started the track up to the top of Haleakala, a super high dopant volcano. It took forever to get to the top but once there….it was awesome. Looing down on clouds and up to clouds as well,…pretty neat!
Overall, It was a beautiful trip. The sites are amazing and definitely a place I think everyone should get the chance to see. I am thankful to have gone, but I think I’m still a Jamaican girl.

Peaches &Cream Stuffed French Toast

Recently, I have seen tons of pins on Pintrest that are Peaches & Cream.YUM!  So, I had a couple of peaches that were a little over ripe…perfect for some stuffed French toast.

Peaches & Cream Stuffed French Toast

4 Slices of Bread (Any type is fine. I used Sara Lee 45 Calorie Wheat)

1 Egg

1/2 Cup Milk

1 tsp Vanilla

Dash of Cinnamon

3 TBSP Cream Cheese(I used cream cheeses spread)

1 TBSP of Sweetener (I used Splenda)

1 Peach sliced thinly

** Spray hot Panini press with non stick spray. Spread cream cheese on all four pieces of bread. Then Sprinkle splenda on top of cream cheese. Put sliced peaches on 2 of the pieces of bread and close to make 2 sandwiches. To make egg mixture, wisk one egg and milk with vanilla and cinnamon. Then did each side of sandwich in egg mixture and place on Panini press. Let cook until desired color. Cut in half and serve with whipped cream.**

Sugar Cookie Bars

Warning! These are GOOD and ADDICTING. I could totally eat the whole pan…literally. Luckily, I made these to take to a 4th of July party, so they were not just sitting around my house. They’re soft and sweet and buttery…and delicious.

Frosted Sugar Cookie Bars

1 Cup Unsalted Butter (room temp)
2 Cups of Sugar
4 Eggs
5 Cups of Flour
1 tsp Salt
1/2 tsp Baking Soda

Frosting

1 Cup Unsalted Butter (room temp)
1 tsp Vanilla
Pinch of Salt
4 Cups of Powdered Sugar
5 TBLS Milk
Food Coloring if desired

**In a stand mixer cream butter and sugar until fluffy. Add eggs one at a time and mix after each. Then mix in vanilla. Slowly add flour, salt and soda to mixture until combined. Line a jelly pan with parchment paper and spread mixture evenly in pan. Bake at 375 for 13-15 minutes. Allow to cool completely before frosting.**

**For frosting- in stand mixer, beat butter until fluffy. Then mix in vanilla and salt. Add powdered sugar one cup at a time. then add milk until smooth and spreadable. If adding color add now. **

4th of July

We had a wonderful 4th of July! Corey’s mom came into town an we all went over to some friends for grilling, swimming and fireworks. It was a blast. The girls had a great time and stayed up WAY past their bedtime. We are still catching up. Here are a few pictures of the fun we had.

Mini Pancakes

With the girls, it seems like anything mini is great! Mini corn dogs, mini cookies,….so why not mini pancakes.(Also called silver dollar pancakes) I made these for the girls and they loved them, and why not…they could pick them up and eat them themselves instead of me having to cut them up into little pieces. I have also found that it is much easier (and less messy) to make pancakes or waffles that are flavored rather than having to pour sticky syrup on them. At this point they still eat with their hands for the most part, so this avoids big messes.

For this little nuggets, I just used the whole wheat just add water pancake mix. I added chocolate chips in half and sprinkles to make funfetti pancakes in the other half. Next time I will stick with the sprinkles, they tasted great and had little mess at all.

Mini Pancakes

Whole Wheat Pancake Mix(I used the just add water kind)

Sprinkles of Choice

Chocolate Chips

**Cook as directed on box, just make them smaller**

Ummm Sonic!

I <3 Sonic for many reasons. Yummy burgers, cheese tater tots, cherry limeades, 1/2 happy hours slushes,…and now 20 something flavors of shakes!

And to top that all off, after 8pm shakes are 1/2 price. That means…..after the girls go to sleep, I go tan, drive to sonic, get a kiddi shake (only $1.08) and go home a happy girl!

I’ve tried a lot of the 20 something flavors, but may favorites include: Peanut Butter Banana, Chocolate Banana, Peanut Butter Cookie, and Peanut Butter Fudge. As you can see, peanut butter, banana and chocolate are definitely in my top tastes.

Just one more reason to LOVE SUMMER.

…We have climbers

There’s crawling,…walking…and then there is CLIMBING!

We have officially reached that stage. The girls have learned to climb on practically everything, which just means we have to watch them even that much closer. I know they are bound to get some bumps and bruises, but I can’t help but hold by breath. They seem to be pretty found on climbing into their toy totes and now onto ANY chair or sofa. They are just growing up way to fast.

 

Speaking of fast….I had our first experience with the girls running in opposite directions last night. Corey had a meeting with one of this carriers, it was a casual dinner for the contracted agents and their families. Corey thought it would be great for us to go and take the girls since most of these agents have only heard about the girls but never met them.

It started of fairly well, the girls were alittle shy at first, but warmed up quickly. Before you know it they were running up to other tables begging for attention. Dinner went ok, the girls sat in our laps (kind of) and ate a few things off our plates as well as some snacks I had packed them. After the meal, the vice president did a short-ish presentation and then some bonuses were given out.

During this time the girls started to get a bit gidgety. They wanted to get down and run around. I guess this would be a good time to mention that this meeting was on the top floor of the Chase Tower. The top floor is practically a long hallway with several meeting/banquet rooms as well as the Amarillo Club (a members only restaurant). So, there was really no place to take the girls out and let them run around. I tried to keep them in the part of the hallway right outside of our meeting room, but we are talking about two 15 month olds…come on!

The Amarillo Club had two separate entrance’s on this hallway, both of these doors were open! At one point, the girls both took off in different directions. I thought, “Yikes, what do I do?” “Who do I go after first?”.  In a split second, I ran for Blakely. She is  a little faster at this point, so I thought it would be smart to get her first. I got to her right as she was going into one of the entrances to the Club. I quickly turned to go after Bostyn with Blakely slung in my arm. As I got to the other entrance, I found Bostyn already about 5 feet into the restaurant filled with men and women dressed in suits and ties. As I rounded the doorway I accidentally knocked over a sign outside (as to not make more of a sense…haha). I grabbed Bostyn by the back of the shirt and pulled her out of there.

The whole thing was so funny to me….maybe it was one of those moments that you had to have been there for, but it was so comical. I couldn’t help but just smile and laugh to myself. Corey finally came out of the meeting, which was thankfully almost over. As we left I told Corey about what had happened, my face literally hurt from laughing.

I’m sure this will NOT be the last time that something like this happens. I can only hope that I will be able to find it as funny an laugh about it. I always thought about what it would be like when the get older and decide to run in opposite ways…what would I do?,  how would I handle it? Well, now I know. This is my life. I hope that no one was too offended,… I’m doing the best that I can do. 🙂

Giant Peanut Butter Chocolate Chip Cookie

I know,…I know! Another Cookie. It is my new weakness. A quick 20 minutes…and a fresh hot cookie awaits you. Doesn’t get much better. This one is delicious.

And just a little heads up- I found a great website with 85 different individual dessert recipes….That means I will be trying just about all of them.

Mix, Bake, Cool and Enjoy!

Giant Peanut Butter Chocolate Chip Cookie

2 Tbsp Margarine

2 Tbsp Sugar

2 Tbsp Brown Sugar

2 Tbsp of Beaten Egg

1/2 tsp Vanilla

2 Tbsp Peanut Butter

1/2 Cup of Flour

1/4 tsp Baking Soda

1/4 tsp Salt

1/4 Cup of Chocolate Chips

1/4 Cup Peanut Butter Chips

(Also can use Reeses Pieces)

***Preheat oven to 350. Mix Butter and Sugars until creamed. Add egg, vanilla and peanut butter and mix. Then add flour soda and salt. Once all combined add chips. Place on a baking sheet sprayed with cooking spray. Bake17-19 Minutes. Let cool and enjoy***
