Crockpots are the best! This meal was so easy thanks to my good ole trusty crockpot. I just put one onion chopped in the pot with a peppercorn crusted beef roast, cooked it for about 8 hours on medium heat and VIOLLA!
Served it over buttered egg noodles, sautéed spinach and roasted butternut squash. MMMMM….nothing like a hearty home cooked meal!
